The Chef de cuisine at the SALT restaurant is Dawid Wojciechowski, who perfected his craft at the best restaurants and hotels in Toruń. He won the Culinary Cup of Poland 2018 and has been with the Copernicus Toruń Hotel for 9 years now. His career started with the junior sous chef and then he consequently proceeded upwards, through sous chef up to the chef de cuisine finally. An ex-sportsman, a rower, to whom rivalry is not an unknown thing. As the chef, he believes that cooking is all about passion, humility and consistency. Every single day, he and his team of well-experienced cooks prepare excellent dishes for you at our SALT a’la carte restaurant.

Taste Toruń

Welcome to a culinary journey through the ages.

We invite you to a unique experience, which is our Taste Toruń tasting menu - created by Chef Dawid Wojciechowski out of his passion for local flavours, history and heritage of the region. Each of the dishes served is based on ancient recipes and historical sources - from the 15th to the 19th century. Modern culinary techniques meet tradition here, creating dishes that not only delight with their taste, but also tell the story of Toruń's past and its culinary identity.

This culinary journey is complemented by regional wines from Kujawsko-Pomorskie vineyards, carefully selected for each dish, which emphasise the character and depth of flavours on the menu. The dinner is accompanied by a booklet that introduces guests step by step to the context of each dish - from quotes from old cookbooks to historical comments and culinary trivia.

This is more than a dinner party. It is a story that is remembered long after the last bite.
